Paneer Bhurji
Ingredients
- Paneer (200gms)
- Onion (2)
- Tomato (2)
- Green Chillies
- Spices: Turmeric, Red Chilly Powder
- Ghee
- Cumin
- Ginger and Garlic (or paste)
Mise En Place
- Chop onions to medium dice. (Can do the remaining steps when the onions are cooking)
- Chop tomatoes to medium dice. 2 green chillies chopped.
- Use mortal and pestle to crush an inch of ginger and 4-5 cloves of garlic
(I like this ginger heavy and light on garlic)
Instructions
- Heat a Kadhai, add 2 spoons ghee
- Add a big pinch of cumin seeds
- (Medium Flame) Add in the onions. Occassionally stir. Until translucent
- Add in the ginger-garlic. Let its rawness go away.
- Add in tomatoes, green chillies. Set flame to medium-low. And let the tomatoes get soft.
- Add in a pinch of salt, half tsp turmeric and some red chilly. I prefer the taste of green chillies in this recipes.
- Add in crumbled paneer, mix a little.
- If available, some chopped coriander would be good.
